Jacket opens in the front with buttons or a zipper, sweater pulls over the head and is made of soft fabric or yarn, sweatshirt pulls over the head and is made of sweatpants-type material (I don't have a great vocabulary for textiles XD). Hoodies are usually sweatshirts but I would also refer to a hoodie as a jacket if it zips up the front.
I would call the fabric heavy jersey or fleece. Usually when people say fleece they refer to polyester fabric, but I like sweatshirt fabric that's cotton and is a smooth knit on the outside and a fleecy warm texture on the inside.
Yeah, I briefly tried to google what sweatpants material is called and saw it described as "fleece" and gave up because that means something different to me, like "a fleece" is a particular type of jacket or zippered vest made of a specific soft material.
