I would say foods that are prepared separately and then either mixed together or arranged on a plate (a composed salad, like Nicoise salad) without any (further) application of heat. If a dressing is used during mixing or right before or after arranging, all parts have the same dressing.
That's the best definition I've seen yet, especially the "without any further application of heat." I had a warm quinoa salad the other week which I reheated before eating, but I would accept being told that wasn't really a salad.
I've gotten in the habit of tossing my salad greens with the dressing and then adding other ingredients on top (without further tossing). Sometimes one of the added ingredients is pickled beets, for which the pickling brine is arguably a dressing.
