2 lb chicken thighs and/or drumsticks
1 cup pitted kalamata olives
1 cup spicy green olives (non-spicy is okay too)
10 or 12 cloves of garlic, sliced
1 cup sundried tomatos, sliced
1 large onion, sliced
1 package (10oz?) mushrooms, sliced
red wine vinegar
olive oil
splash worcestershire sauce
oregano, thyme, salt, pepper

Marinate chicken at least 2 hours in olives, garlic, tomatoes, herbs, worcestershire, and vinegar. Preheat oven to 350. Coat the bottom of a 9x13 glass baking dish with olive oil. Arrange the chicken so it's mostly covered by the mixture of stuff it's been marinating in (add the liquid too). Bake 1/2 hour, during which: sautee onion and mushrooms in olive oil until they're not quite done. At half hour point, take chicken out of oven, spread onion-and-mushroom mixture over the top, and put it back in the oven. Bake another 1/2 hour. Serve hot over brown rice.

I loved it, and I hate olives. I was sure that I'd be picking off the olives as I ate the chicken, but by working the olives onto the fork along with the meat, I ate it all up.

Most yummy, that.

I also am not terribly fond of olives. I invented this recipe by accident: I had tasted a baked chicken dish at a party which had prunes in it (the dish, not the party -- well, I guess the party did too), and I wanted to reproduce it except that (a) I had no prunes and (b) I didn't remember what else was in it. Heh. I had some sundried tomatoes lying around, and there's no such thing as too much garlic, so I just went with my instincts and came up with this. I'm glad you liked it.

I used the leftovers to make it again and all I did was add more liquid and spices and put the leftover bits on top and baked it for 1.5 hours and it was still very yummy. I served it with corn on the cob as a summer finger food sort of thing.
