3" of slush, and orange-ginger muffins
Dec. 9th, 2005 01:44 pmI just went out and shoveled the heaviest snow I've ever lifted. There was rain falling out of the sky when I went out, and by the time I came it, it switched to sleet. Bleh.
In other news, I revisited my orange-ginger muffin recipe this morning, this time using my brand-new bright-blue silicone muffin pan! The recipe:
Preheat oven to 425.
2 cups flour
1/3 c sugar
1 generous Tbsp baking powder
some cinnamon
a bit of nutmeg
2 eggs
1/3 c canola oil
juice of one large navel orange (1/4 cup or a little less)
zest of one orange
insides of a different large navel orange, chopped into approximately 1/4" pieces
candied ginger, chopped into smaller pieces
Bake 20 minutes. Makes 8 muffins.
And the verdict: the silicone pan is wonderful! You don't have to pry the muffins out. Their bottoms aren't burnt. They're baked evenly all the way through. Yay!
