The only preparation I've found in which I really enjoy butternut squash is pureed and cooked with oatmeal (and maple syrup and sweet spices), as a breakfast.

I mixed the puree into a savory pancake batter for over 100 people at school and served it with a relish of raw cranberries, raw oranges, and sugar.

That sounds good. I'm willing to try things with squash or sweet potatoes, I just don't usually like them enough to seek them out.

Actually, after all the food photos you've posted, I'd be happy to try almost* anything you make.

*as long as it doesn't contain eggplant

Wow, there's no accounting for taste. I love butternut squash. I eat the stuff baked, unadulterated, yum. And in soup. And with various spices mixed in. And instead of pumpkin in my pumpkin chocolate chip squares where they make it really fine.
